Ground Turkey Sweet Potato Skillet

Ingredients
2 tbsp Extra Light Olive Oil 16 oz Turkey, Ground turkey, 93% lean 3 tsp Garlic 1 cup, chopped Onions, raw .5 cup, chopped Onions, raw 3 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips 4 sweetpotato, 5" long Sweet potato 1 tsp Salt 1 tsp Pepper, black 1 tbsp Cumin seed 1 tsp Chili powder .5 cup Kraft Shredded 2% Mexican Four Cheese blend
Directions
Cook onions and garlic in half the olive oil. Once almost done add peppers. Cut sweet potatoes into chunks and cook in microwave in a bit of water covered until almost done, but not all cooked through. Use other half of olive oil and cook ground turkey, add all spices to turkey as it cooks, coat all of it. Spray casserole dish, add ground turkey to peppers, onion mixture, stir together. Pour into dish, spread chees over top, cover with tin foil and cook on 325 for half an hour.
