Instant Pot Apple Cranberry Steel Cut Oats

1 cup Steel Cut Oats, dry 2 cup (8 fl oz) HOT Water1 cup Milk, nonfat - you can use other milks, but adjust the calories1 Medium Apple, Gala peeled & diced into small pieces1 cup, whole Cranberries (fresh or frozen)1/3 cup, unpacked Brown Sugar (honey may burn, raw sugar works)1 tsp Cinnamon, ground 1/4 tsp Ginger, ground 1/4 tsp Nutmeg, ground
NOTE: I do NOT recommend making oats in stove top cookers. Electric pressure cookers have safety shut off in case the valve gets plugged. Only make up to 2 cups of dry oats at once in a 6+ quart model and NEVER use the quick release.
Spray liner/pot with non-stick spray or a small amount of oil.
Toss oats in and hit saute, stir for a few minutes until they JUST start to brown or smell slightly nutty/warm. Turn off the saute function.
Add all remaining ingredients and mix to combine.
Secure the lid on your pressure cooker, set to manual, high pressure for 15 minutes.
When done and it beeps let it NPR (natural pressure release?) for at least 15 minutes.
Remove lid and stir. Let sit for 3-5 minutes before serving.
STOVE TOP DIRECTIONS:
The night before:
Toast the oats in a frying pan.
Mix all ingredients together in a bowl except fruit and put in the fridge overnight to soak.
In the Morning:
Add the soaked oats to a pan, along with the fruit.
Bring to a boil, then reduce heat to low and cook for 15 mins, stirring often.
Serving Size: Makes 6 servings. Approx. 2/3 cup each.

Great recipe with fruit and spices. Love making steel cut oats in the instant pot. My general recipe is 3.5 cups liquid (water) to 1 cup steel cut oats, 5 minutes on high % release pressure naturally-and keep warm. Make them plain sometimes and people can add in what they want.
