1 slice bacon2 TB chopped onion2 TB chopped green bell pepper1/2 cup of baked potato w/o skin1 large eggSprinkle of shredded cheddar cheese
Cook bacon in non-fat skillet. Set aside on paper towel to drain. Drain bacon grease from pan, leaving just a residue of drippings. Add onion, pepper, and potato and cook until pepper is softening and potato is browning. Beat egg in small bowl and pour over the whole lot in the pan. Salt and pepper to taste. Sprinkle with a pinch of cheddar cheese. Bacon can be crumbled and added to frittata or can be eaten alongside.
