Lemon Yogurt Bread

.5 cup Granulated Sugar 2 tsp Lemon Peel 1.50 cup flour, white , Robinhood all purpose unbleached (by NEW-BEGINNING) 2 tsp Baking Powder .5 tsp Salt 3 serving Danone Oikos Greek Yogurt (Coconut) 3 large Egg, fresh, whole, raw 4 tbsp Coconut Oil Organic - Spectrum Naturals 1 cup, unsifted Powdered Sugar 3 tbsp Lemon juice
Preheat oven to 350 degrees. Spray a loaf pan.
In a large bowl add sugar and zest and rub together with your hands until incorporated. Add all the rest dry ingredients.
In a small bowl add yogurt, eggs, vanilla and stir to combine.
Slowly add melted coconut oil and stir until completely incorporated.
Add wet to dry ingredients just until completely combined.
Pour into loaf pan an bake for 50-55 minutes.
Take out of oven and let sit in pan for 5-10 minutes.
Take out of pan and put onto wire rack until cooled.
Mix powdered sugar and juice together and glaze loaf.
Cover with foil or in a covered plastic container.
Serving Size: Makes 10 - 1/2 inch slices
