2.0 clove Garlic1.0 small Onions, raw4.0 tbsp Extra Virgin Olive Oil32.0 oz Potatoes, new1.0 serving herb bundle
Cover potatoes with water in large pot. Add an herb bundle of bay leaf, parsley, thyme & rosemary. Chop onion and add to pot along with crushed garlic and salt to taste. Cook till just soft, about 10 min. Cool slightly and flatten with bottom of glass. Heat a shallow layer of oil in skillet. Add potatoes and fry till crispy on each side. Drain on paper towels. Serve.
