French Onion Pork Chops and Brown Rice

Ingredients
6 assorted pork chops, 1/2" thick2 Tbl. Olive Oil1-1/2 cups Brown Rice1 can Campbells French Onion SoupBeef Broth (around 2 cups)
Directions
Preheat Oven to 350 Degrees.

Heat oil in large skillet over medium high heat and brown pork chops on both sides, set chops aside. Drain and reserve the onions from the soup, add enough beef broth to soup to make 3 cups of broth. Add the onions and the rice to the broth. Spread on the bottom of a 9" x 13" baking dish and place pork chops on top of rice. Cover tightly with foil and bake for 45 minutes.

    I made a variation of this. It was a pork tenderloin in the slow cooker with 1 can of low sodium chicken broth and Carb Options (South Beach) Onion Soup Mix. Set it for 6 hours and it was wonderful. My family enjoyed it even as left over's it was juicy. I would make this again. - 4/24/09
