1.33 cup Beans, black1.0 cup simply nature organic quinoa1 cup simply nature thick & chunky medium salsa2.0 cup sweet potato, shredded1.0 cup Aldi's Happy Farms Shredded Mild Cheddar Cheese (1/4 C)1.5 tsp minced onion1.5 tsp Garlic, minced1.5 tsp ground Cumin 1.0 tsp Salt (.5 top in quinoa, .5 top in casserole)0.5 tsp Pepper, black2.0 medium Egg, fresh, whole, raw
Combine all ingredients, holding back .5 cup of the cheese. Spray 2 quart baking dish with nonstick spray. Dump mix in baking dish. Top with remaining cheese. Bake uncovered 30 min at 350 F.
