Homemade Mayonaise

Ingredients
3.0 large egg yolks1.0 dash Pepper, black to taste1.0 dash Salt, to taste16.0 tbsp Extra Light Olive Oil5.3 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil1.5 tbsp Pompeian Gourmet Red Wine Vinegar 1tbsp1.0 tsp dried mustard
Directions
Make sure eggs are room temperature, melt coconut oil. Put all ingredeients into tall glass jar, in the same order as they are written (eggs first, then vinegar...) . Put immersion blender at bottom of jar and turn on, holding at the bottom for 20 seconds. Then move up and down until all oil is blended. Refrigerate. Lasts up to 2 weeks. Serving Size: 1 tbsp - 30 servings
