0.12 cup Blueberries, fresh4.0 tbsp Bob's Red Mill - Organic Whole Ground Flax Seed Meal0.5 tsp Baking Powder0.12 cup Maple Grove Farm Maple Syrup (sugar free)1.0 large Egg, fresh, whole, raw1.0 tsp Cinnamon, ground1.0 orange zest (optional)
Mix all ingedients except blueberries, let sit for bp to activate and batter to get fluffy. Heat skillet on medium high, spray with spray oil. Pour in mix and spread to 8" pancake, top with blueberries. Cook until bubbles slow or stop (5 min.), flip and cook for additional 3-5 min. serve with sugar free syrup.
