Slow Cooker Quinoa Chicken Chili

Ingredients
1 cup Whole Grain Quinoa, rinsed28 oz. Can Crushed Tomatoes NO SALT 14 oz. Can Rotel Diced Tomatoes & green chilies NO SALT added 2 (16 oz.) Cans Black Beans Reduced Sodium, rinsed 2 cups Corn, Frozen (can also do 1 can no sodium corn, rinsed)3 cups chicken stock/broth, low sodium16 ounces Chicken Breast, cooked and shredded1 Med. Green Bell Pepper, diced1 tsp Minced Onion 1 tsp Garlic, minced1 tsp Ground Cumin1 tsp Crushed Red Pepper 1 tsp Chili powder Season with pepper to taste
Directions
Place everything in a 6 qt. slow cooker and cook for 5-7 hours on low. NOTE: To cook and shred the chicken breasts--place chicken in a medium sauce pan covering with water on medium heat and boil for 40 min for easy shredding. Can also just place chicken directly in slow cooker and shred it before serving. Serving Size: 1 1/2 cup serving
