1.5 lbs of Jennie-O Turkey Breast strips1/2 C. Hoisin sauce1/2 C. Asian Peanut Sauce 1 medium cucumber seeded and chopped1/2 C. shredded carrot1/4 C. torn fresh mint leavesPepper to taste12 large Boston lettuce leaves or iceberg or romaine lettuce.
Brown turkey in large nonstick skillt over medium heat and cook through.. Pour off any drippings. saute onion... Stir in hoisin sauce and peanut sauce and heat though. Just before serving, add cucumber, carrots and torn mint. toss gently. Season w/ pepper...I didn't use any salt as there is plenty in the sauces. A great thing to add for some crunch would be water chestnuts if you like them too. Serve mixture in lettuce leaves.. Garnish w/ more mint....ENJOY
