3.5 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can) 2 tbsp Red Curry Paste (by DAY-ZEE) 2 cup (8 fl oz) Chicken Broth 2 tbsp Fish Sauce 6 tsp packed Brown Sugar 2 tbsp Peanut Butter, smooth style, with salt 6 thigh, bone and skin removed Chicken Thigh 1 medium (approx 2-3/4" long, 2- Peppers, sweet, red, fresh 1 medium (2-1/2" dia) Onions, raw 3 tsp Ginger Root 1 cup Peas, frozen
Mix curry paste, coconut milk, chicken broth, fish sauce, brown sugar, and peanut butter in slow cooker bowl. Place the chopped chicken, chopped red pepper, and thinly sliced onions and grated ginger in the slow cooker. Cook on high for 4 hours. Add the peas and cook for another 30 minutes. Serve with rice.
