.33 cup Coconut flour (by SCRAPPYMELLA) 4 tbsp Coconut Oil Organic - Spectrum Naturals 2 oz Walnuts 0.33 cup dry Oatmeal (plain) 2 large Egg, fresh, whole, raw 4 tbsp Honey 0.25 tsp Salt - Iodized Sea Salt (by HIATTP)
Mix all ingredients together except nuts and oatmeal. Coconut flour will absorb liquid and become thicker and doughy. When all items are mixed and it looks like cookie dough add nuts and oatmeal. Form rounded tablespoons onto parchment paper. Press down into cookie shapes (will not spread like a wheat-based cookie). Bake for about 12 minutes in a 350 degree oven. Check on at about 9-10 min. since things made with honey brown very quickly. Remove from paper and cool. Makes about a dozen 1 1/2" - 2" cookies.
