Ingredients
1.0 cup Nature's Earthly Choice Quinoa - 1/4 cup dry 1/2 cup cooked1.0 cucumber (8-1/4") Cucumber (with peel)0.5 cup, chopped Onions, raw0.25 cup Cranberries, dried, sweetened (craisins)4.0 oz President Fat Free Crumbled Feta0.12 cup Lime Juice0.25 cup, chopped Walnuts
Directions
Cook quinoa according to directions Dice cucumber and toss all ingredients in a large bowl sprinkle with 2 Tbsp of lime juice. Lemon is good too.
