Grit Casserole - The Healthier Version!

Ingredients
Ingredients: Chicken stock, home-prepared, 3 cup Quaker Plain Corn Grits, 1 cup Spinach, frozen, 1 cup Yellow Sweet Corn, Frozen, 1 cup kernels Roasting Chicken, light meat, 2 cup, chopped or diced Cheddar or Colby Cheese, Low Fat, 0.5 cup, shredded Garlic, 2 clove Peppers, sweet, red, raw, sliced, 0.5 cupSalt, 2 tbsp Olive Oil, 1 tbsp Onions, raw, 0.5 cup, chopped
Directions
Cook Grits according to directions (stove top)
PreHeat oven to 350
Cooking spray a large casserole dish
Combine all other ingredients in large bowl (leaving a little cheese for topping)
Add cooked grits to bowl blend together
Transfer to dish - add cheese topping
Heat in oven until bubbly!
