Peanut Noodle Salad

8 tbsp Natural Peanut Butter 4 tbsp Low Sodium Soy Sauce 1 Lime juiced 1 tsp Red Chile Pepper Flakes1 tsp Ginger Root minced2 clove Garlic minced8 oz Whole Wheat Spaghetti 2 Tblsp sesame seeds roasted and toasted 2 medium Carrots, grated with a box grater3 medium Scallions (green onions) diced1 Tblsp Tamarind paste 1 block Tofu, firm sliced4 tbsp Cilantro chopped
Cook pasta according to box directions and preference.
In a large bowl whisk, peanut butter, soy sauce, lime, red chile flakes, ginger, garlic and tamarind paste. Add warm noodles and cook evenly.
Stir in carrots, scallions and sesame seeds. Garnish with tofu and cilantro.
Serving Size: Makes 8 1.5 cup servings
