Chicken Enchilada

Ingredients
1 lb. chicken tenders, skin removed1 16oz. jar Pace Picante Sauce1.5 cups shredded cheddar cheese8-8in flour tortillas*sour cream optional
Directions
Brown chicken in skillet using Pam cooking spray. Preheat oven to 350 degrees. Mix 1 cup of cheddar cheese and 1 jar of Picante sauce, set aside. Spray baking dish with cooking spray. Place one chicken strip into 1 tortilla, cubing optional. Add 2 tbsp sauce mixture. Fold tortilla with seam-side down. Cover dish and place in oven for 30 minutes. With 10 minutes remaining, cover enchiladas with remaining sauce/cheese mixture and put back in oven. Done when cheese is melted. May garnish with low-fat sour cream, optional.

    I like this recipe because it was easy and tasy. I used 2% fat shredded cheddar cheese. It melted great and tasted great. I also added cumin inside. - 4/14/10
