Ingredients
9.0 large Egg, fresh, whole, raw1.0 package (10 oz) Spinach, fresh1.0 pepper, large (3-3/4" long, 3" dia) Yellow Peppers (bell peppers)1.0 cup Beans, black0.25 cup Almond Breeze Almond Coconut Milk Blend Unsweetened
Directions
Preheat oven to 400 degrees. Liberally coat a muffin tin with nonstick spray. Dice bell pepper. Wilt spinach in a saute pan. Rinse and drain black beans. Arrange vegetables among muffin tin. Beat eggs and milk. Add salt and pepper to taste. Pour over vegetables. Bake for 12-15 minutes or until set. Can substitute coconut almond milk with any preferred type of milk. Serving Size: Makes 12 muffins
