Super Simple Salad With Sweet Vidalia Dressing

Ingredients
2 large red, ripe tomatoes, diced2 cups fresh broccoli, cut in bite sized pieces1 Vidalia onion or (Walla Walla Sweet), diced3 T. Red Wine Vinegar4 T. Extra Virgin Olive Oil1/2 t. Black Pepper, coarsly ground
Directions
Prep broccoli and tomatoes and place in serving bowl. Prep onion and add 1/2 to broccoli & tomatoes.

Place remaining onion in blender, add vinegar and puree for 30 seconds. Leave blender running while slowly adding olive oil. Blend another 5 seconds.

Pour dressing over salad. Add freshly ground pepper, Toss well to coat evenly and refrigerate until ready to serve. My husband says this recipe is even better served the next day. Makes 4 servings (roughly 1 cup each)

    This is the best! I wanted a broccoli salad that did not use mayo as the dressing. We sometimes use Vidalia onion dressing (light) and add soy nuts if we are having a snack; dried sour cherries or cranberries (craisins) and maybe some crumbled turkey bacon for flavor. - 1/18/09
