Brown rice pudding, baked

Ingredients
2 cups brown rice, cooked1 3/4 cup whole milk1/4 cup water2 large eggs1 Tbsp honey1 tsp vanilla extract1 tsp ground nutmeg
Directions
In a small mixing bowl, combine milk and water (or two cups of lower-fat milk). Add honey, eggs, and vanilla, and mix thoroughly. Stir in brown rice.

Put in a lightly buttered or oiled 8x8" pan. Sprinkle liberally with nutmeg. Bake at 350F for 45 minutes or until firm.

Serve with sliced fresh fruit, berries, or cooked fruit.

Makes nine 2 1/2" square portions.
