Zucchini Apple Bread, Ted's Vegan

1.0 cup Whole Wheat Flour1.0 cup Zuccini Squash1.0 cup, quartered or chopped Apples, fresh with skin3.0 tsp Baking Soda1.5 cup Oats, Quaker0.5 cup Granulated Sugar1.5 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)0.25 cup, packed Raisins0.5 cup pieces or chips Walnuts
Mix all dry ingredients (except walnuts and raisins) in a large bowl and all wet ingredients in another. Combine and stir just enough to mix (a few lumps are okay), then stir/fold in walnut pieces and raisins. Pour into baking dish (I used pyrex glass 8 x 10, 11 cup) and bake at 350F for 60 minutes or until knife comes out clean (I used convection toaster oven). Allow to cool before slicing.
