2 cans black eye peas, drained (not the kind seasoned with bacon) 2 cans Yellow Sweet Corn, drained2 cans diced tomatoes w/ zesty mild green chilies, drained 1 Green Bell Pepper, chopped1 Red Bell Pepper, chopped1 Jalapeno Pepper, seeded and chopped1/2 med yellow onion, choppedDressing:1/2 cup Extra Virgin Olive Oil 1/2 cup Vegetable Oil (could also swap for more olive oil, but i didn't like the taste of ALL olive oil)1/2 C Red Wine Vinegar 1 tbsp balsamic vinegar 1 tbsp Dijon Mustard1 tsp salt1/2 tsp black pepper1/4 tsp Granulated SugarPinch of dried Oregano
In a large bowl, combine your vegetables. In a glass jar, combine your dressing ingredients, put the lid on, and burn a few calories shaky shaking it up until well blended. Pour the dressing over the vegetable mixture and stir gently, but thoroughly. Cover and refrigerate until serving time, preferably overnight.
