Ultimate Potluck Salad with Chicken

Ingredients
Whole chicken, cut upsalt and pepperolive oil spray1 avocado, diced2 scallions, sliced1 large or 2 reg bags lettece(your choice)1 pint cherry tomatoes, halved6 large leaves basil, chiffonad1 bottle Kraft Light Done Right Ranch 1/2 box alfalfa sprouts1 bell pepper, diced1 cucumber, sliced1large portobello mushroom caps,diced
Directions
Spray the chicken pieces with Olive oil spray and sprinkl with salt and pepper. Roast in a 400 degree oven 20-30 min (until chicken reaches correct temp). Let cool and then shred meat and set aside.

Combine all ingredients, except dressing, in a large bowl.

Just before you are ready to serve toss with dressing.
