Sal's Pumpkin Garbanzo Stew (Tagini)

Ingredients
1 large Onions, raw 3 clove Garlic 2 cup, raw pumpkin, diced2 tsp Olive Oil 1.5 large whole (3" dia) Tomatoes, red, ripe, raw, year round average 3 cup Spinach, fresh 1 tsp Cumin seed 1 tsp Coriander seed .5 tsp Turmeric, ground .5 tsp Ginger, ground .5 tsp Cinnamon, ground .5 tsp Pepper, black 2 cups water or vegetable broth
Directions
Saute Onions about 5 mins.
Add garlic. Saute 1 minute.
Add spices. Stir.
Add tomatoes and broth (or water).
Bring to boil. Add pumpkin. Simmer till soft (5-10 minutes)
Add garbanzo. Simmer 5 mins.
Stir the spinach in, during the last two minutes.

Serving Size: 6 for reasonably hungry people
