Italian Sweet Potato Wedges

2 Sweet Potatoes, (5" long) cut into wedges1 1/2 tbsp. Extra Virgin Olive Oil 1 tbsp. Italian Seasoning 1 tsp. Salt 1 tsp. Sugar 1 tsp. Black Pepper
1. Preheat oven to 425. Line a large baking sheet with tin foil.
2. Peel the sweet potatoes (if preferred) and cut off pointy ends. slice the sweet potatoes in 1/2 (lengthwise), then cut each piece into wedges.
3. In a separate small bowl mix salt, sugar, pepper, and Italian seasoning
4. Place the wedges in a large bowl and coat with olive oil. Next pour the seasoning mix over potatoes and mix well.
5. Arrange the wedges in a single layer on the prepared baking sheet. Bake for 30 and then turn the broiler on and bake for another 3-5 min or until browned and crispy. (***Keep and eye on the broiler so they don't burn***)
