Blueberry Breakfast Streusel Cake

Streusel Topping:3 TB flour3 TB sugar1 TB margarineCAKE:2 cups reduced fat baking mix1/3 cup sugar2 tsp grated lemon peel3/4 tsp cinammon3/4 cup skim milk1 tsp vanilla extract1/4 cup egg substitute (egg beaters)1 cup fresh or frozen berries.
Bake in an 8 x 8 pan for 30 minutes, makes 9 squares.
1. cut in margarine into streusel mix (the sugar and flour) set aside.
2. Cake Batter: Mix, Reduced fat Baking Mix with sugar and cinammon.
3. Mix skim milk and egg substutute with grated lemon peel and vanilla.
4. Mix dry ingredients into wet ingredients.
5. Fold in the fresh berries ** if you are using FROZEN berries, add the berries to the dry ingredients instead of folding in at the last minute.
6. top with streusal topping.
