Cajun Black Bean Sweet Potato Quesadillas

Ingredients
1 large Sweet potato, cooked, baked in skin, without salt 2 cup Beans, black 16 serving El Pollo Loco, 6 inch corn tortilla 0.5 cup Spinach, frozen 4 clove Garlic 1 serving Kroger 100% Whole Grain Oats - Quick Cook Oatmeal - 1/2 cup uncooked .66 tbsp Flaxseed 2 cup, shredded Cheddar Cheese
Directions
Mash cooked sweet potato, rinsed beans and other ingredients together in a bowl. Place each individual tortilla, as many as will fit, on a non stick pan on medium high heat. Sprinkle cheese on top of each flat tortilla, spoon some of the bean mixture on top. Once cheese melts a little, fold in half to close. Cook until brown on both sides.
