6.0 large Egg, fresh, whole, raw8.0 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil1.0 tsp Vanilla Extract1.0 serving Maple Syrup - Maple Grove Farms Pure Maple Syrup (1/4 cup)4.0 tbsp coconut flour0.25 tsp Baking Soda1.0 cup Blueberries, fresh
Preheat oven to 350 f
Whisk the eggs, melted coconut oil, pure vanilla extract, maple syrup, and the juice and zest of half of a lemon. Sift in coconut flour, .5 teaspoon of sea salt, and baking soda. Gently fold in blueberries.
Pour into greased muffin tin and bake for 35 to 40 minutes
