Greek Cucumber Noodle Salad

Ingredients
2 English Cucumbers1 pint Cherry Tomatos 1/2 Small Red Onion 1 - 7.5 oz. jar Marinated Artichoke Hearts20 - Kalamata Olives 2 Tbl Lemon juice2 Tbl Extra Virgin Olive Oil 2 Tbl Pompeian Gourmet Red Wine Vinegar 4 oz Athenos Reduced Fat Feta Cheese 1/2 tsp Oregano1/8 tsp each - salt and pepper
Directions
Using a spiralizer or veggie noodle maker, make cucumber noodles. Cut cherry tomatoes in half. Slice red onion into super thin strips. Coarsely chop olives. In a small bowl, whisk together the lemon juice, olive oil, red wine vinegar, oregano, salt & pepper. Mix all vegetables and olives together and pour dressing mix over. Stir well. Add feta cheese and stir.
