Orange Roughy with Zesty Citrus Sauce and Fruit

Ingredients
.25 cup, diced Pineapple, fresh 3 medium (1-1/4" dia) Strawberries, fresh .25 cup, sliced Mangos .25 cup slices Peaches, fresh 2 pepper Hot Chili Peppers 1 pat (1" sq, 1/3" high) Butter, unsalted .25 cup Grapefruit Juice .25 cup Lemon Juice 3 oz Orange Roughy (fish)
Directions
Place fish in oven-ready dish. Ok to layer if making multiple servings. Cover with grapefruit and lemon juice and top with butter. Add diced fruit and pepper chunks. Bake covered at 375 for about 30 minutes or until fish flakes with light fork touch. Serve with a side of rice pilaf or your favorite green vegetable.
