Tofu-Vegetable Stir Fry with Plum Sauce

Ingredients
4 Cups cooked Jasmine Rice1 Cup Chopped Celery1 TBS Garlic1 Block Extra Firm Tofu, cubed10 Baby carrots, sliced1 Onion, chopped1 TBS ground ginger1 can water chestnuts1 jar plum sauce *12 TBS2 TBS vegetable oil
Directions
Place vegetable oil in a large skillet or wok. Add onions, tofu, celery, carrots, garlic, and water chestnuts. Cook over medium heat for 10 minutes, until onions have softened. Add plum sauce and ginger. Cover and simmer for 20 minutes. Mix in rice, serve and enjoy.
