Vegetarian Lemon Chicken

Vegetarian Chicken 2 psc (400g)1/2 med Cucumber (sliced)2 med Tomatoes (Sliced)1 Lime (Sliced)1 Lime leafSeasonings:1 tbsp Tomato sauceSalt to taste1 tsp soy sauce1 cup Rice
Retain 1/2 of the lime peel and cut it into shred together with the lime leaf.
Deep fry the vegetarian chicken till golden brown, drain and th en cut into slices. Transfer onto serving plate.
Leave 1/2 tsp oil in the wok, stir in the seasoning, lime pcs, lime leaf, sufficient water and then chicken with the corn starch. Then, add in vegetarian chicken and cook for 1 min. Pore on seasonings. Garnish with cucumber, tomato and lime slices. Served over 1 cup rice.
Serves 4 Nice with a small tossed salad.
