You can make as many as you'd like, but I think two per person is a reasonable side dish if you are craving some spice. First, wash the peppers, then cut of the top part where the stem is. Take a very small spoon to scoop out the inside where all of the seeds are. You might have to use a knife to hollow out the space for the cream cheese. If you don't want them to be too hot, rinse out the inside after you hollow it out to remove any leftover seeds.Next, stuff about 1/2 a tbs of cream cheese into each one. Then, take a half of a peice of bacon and fold it over the hole and secure it with a moistened toothpick (so it won't singe). Keep them as upright as possible on the grill. I hit them with flame for a few minutes, then cook them off heat for about 20 minutes. It varies so, watch them carefully.If you want to bake/broil them instead, cook on a rack and check on them after 20 minutes at 350 degrees or so.
Makes four stuffed peppers. Great for a side dish for one or two people.

i have made something very simillar to this recipe and we love these. i use the lower fat cream cheese and cut the peppers and in half and wrap the bacon around instead of just stuffing the top. i am going to try this idea but use a piece of bacon and just lay it on top of the halved pepper stuffed. - 6/5/08
