Lemon Garlic Chicken

4 4 oz boneless, skinless chicken breast .25 cup Flour, white 1 tbsp Extra Virgin Olive Oil 1 clove Garlic, minced 1 cup Low Sodium Chicken Stock1 Lemon, juice of one whole lemon and the zest 15 Green Olives, roughly choppedSalt and Pepper to taste
Season chicken with salt and pepper. Dredge the chicken in the flour.
Heat oil on medium and saute the chicken 5 min on each side.
Add garlic and chicken stock to the pan, scrape any bits fro the bottom of the pan (aka flavor bits) and simmer for 5-10 min while the sauce thickens (should coat the back of a spoon).
Add the lemon juice, zest and olives. Stir well and season with salt and pepper to taste.
Serving Size: Makes 4 - 4oz portions
