2 Roma tomatoes 1/2 Red onion2 cans Diced tomatoes & Green Chillis Rotel, 10oz can1/2 can Tomato PasteDried BasilGround CuminChili PowderGarlic Salt1 Pork Tenderloin Roast (4.8 lbs)
Place tomatoes, onion, Rotel, tomato paste, and seasonings in blender and blend until smooth.
Place blended sauce and pork roast in crock pot and simmer on low for 4 hours. Remove roast from sauce, shred with forks, add shredded pork back to sauce and stir. Continue simmering in crock pot for 1 hour.
Serving Size: Makes filling for approx 16 small tacos. 1 serving = 2-3 tacos
