Hearts of Palm "Potato" Salad

Ingredients
2 tsp. fresh lemon juice1 tsp. Dijon mustard1 small clove garlic, minced1 T extra virgin olive oil2 cans hearts of palm, drained and cut into 1/2 inch slices (~3 cups)2 T chopped chives
Directions
In large bowl, whisk together lemon juice, mustard and garlic. Continuing to whisk, add oil in a slow stream. Add sliced hearts of palm and chives. Toss to combine.

Optional: season with additional salt and pepper.

Makes four 3/4 cup servings.
