Honey Pineapple Pork Roast

Ingredients
3 lb. boneless pork loin roast1/2 cup honey1/2 cup soy sauce1/4 cup white vinegar1 cup crushed pineapple1 tsp ground ginger (or 2 tbsp grated fresh ginger)2 cloves garlic, minced
Directions
Score roast in 1 in diamonds with a sharp knife (1/4 in. deep). Combine all ingredients and pour over roast. Let roast marinade 2 hours to overnight in refrigerator; remove 1 to 2 hours before roasting. Place in shallow pan; roast 45-60 minutes (or until internal temperature is 155 degrees in 350 degree oven. Baste with marinade every 15 minutes.
