Sicilian Chicken

Ingredients
5 potatoes, peeled and quartered1 tsp Oregano.50 cup Parmesan Cheese, grated 4 clove Garlic 2 tbsp Extra Virgin Olive Oil 1 dash Salt 1 dash Pepper, black 4 Chicken Breasts
Directions
Preheat oven to 350 degrees. Place chicken and potatoes in 10" frypan with lid. Sprinkle with 1/2 the oregano and 1/2 the cheese. Add the garlic (I use minced) Sprinkle with the rest of the cheese, oregano, salt and pepper to taste. Pour olive oil over and cover the pan. Bake at 350 degrees for 1 hour and 15 minutes until potatoes are brown.
I usually use more cheese and more olive oil, but this is pretty basic.
