1 cup Chickpeas (garbanzo beans) 1 serving Lemon, fresh squeezed, juice of one whole lemon 6 tbsp Smart Balance Omega canola soy and olive cooking oil (by LESLIEBRIGGANCE) 0.5 tsp Pepper, black 0.5 tsp Thyme, ground 0.25 cup Cut Leaf Spinach - Frozen
Boil chickpeas 15 minutes. Discard water.
Add 4-8 times water and boil gently 30 minutes. Discard water and flash chill w/ cold water.
Individually remove outer husk.
Add black pepper, thyme, lemon juice and oil to softened chickpeas in blender (nutribullet). Pulse until all chickpeas paste.
Add frozen spinach cut leaves and blend.
Ready to serve on crackers or as dip with pita chips
