Chicken Fried Rice (brown rice)

2 lb boneless skinless chicken breast, trimmed 2 Tbs Canola Oil2 cup basmati brown rice, uncooked 5 Tbs Kikkoman Lite Soy Sauce 1 med red bell pepper, chopped 1.5 cup green onion, chopped 12 oz peas and carrots, frozen
- Cook rice according to package directions. Set aside.
- Heat peas and carrots in the microwave 2 minutes. Set aside.
- Trim all visible fat from chicken breast. Cut into 1/2" strips.
- Heat oil to medium heat in a large skillet. Brown chicken and season liberally with fresh ground black pepper.
- Add 1/2 the soy sauce and stir to coat. Continue browning another minute or two.
- Add rice, vegetables and remaining soy sauce.
- Season with garlic powder and crushed red pepper.
- Continue to cook 3-5 minutes, stirring frequently, until everything is heated through.
Serving Size: makes seven 2-cup servings
