2 cup Rye flour, light 2 tsp Baking Powder 1 tsp Baking Soda .5 cup Oats, Quaker 1 dash Salt .25 cup Coconut Oil 1 tsp Vanilla Extract 3 medium (7" to 7-7/8" long) Banana, fresh 3 tbsp Honey 0.25 cup Soy Yoghurt - Whole Soy & Co. (by JANMARLENE1) .25 cup Milk, Blue Diamond Almond Breeze Almond Milk Refrigtd (1 cup) .75 cup Blueberries, fresh
Preheat the oven to 180 degrees, and line a loaf pan with baking paper.
In a small bowl, whisk together the flour, oats, baking powder, baking soda, and salt. In a separate bigger bowl, whisk together the coconut oil and vanilla. Stir in the mashed banana, Greek yogurt, and honey. Alternate between adding the flour mixture and the milk (if you need it), stirring just until incorporated. Fold in the blueberries.
Put into the prepared pan and poke the spare blueberries in and sprinkle the oats on the top. Bake for about 40 minutes, or until a skewer comes out clean. YUM!!!
