"Too many veggies" curry

1 cup Trader Joe's Coconut Milk (by LAURA30033) 3 clove Garlic 1 pepper Jalapeno Peppers 3 tbsp Curry powder 1 tbsp Ginger, ground 1 tbsp Chili powder 1 tbsp Salt 5 dash Pepper, black 1 stalk Broccoli, fresh 4 sweetpotato, 5" long Sweet potato 10 beans (4" long) Green Beans (snap) 10 large Mushrooms, fresh 74 gram(s) bell pepper, red, sweet, raw 2 small Onions, raw 4 tbsp Olive Oil
Preheat oven 375*
Cut up veggies to ideal size (except onions and jalapeno)
Cover in oil and spices
Roast 30min, shuffling on tray halfway
Put large pot on burner, medium heat
Dice onions, saute in oil about 5 minutes
Add garlic, spices, and jalapeno
Saute 2 minutes
Add coconut milk, simmer 5 minutes
Add veggies from oven, simmer ~15 minutes
Spice as wanted
