12 ounces of cooked skinless, boneless chicken breast- chopped or shredded4 TB of mayonnaise made with olive oil or light1 cup cucumber, with peel, chopped1 cup tomato, chopped1 TB onionsalt, pepper, dill, or seasoning of preference
It's simple! Mix all the ingredients.
I like to add dill or "Over the Edge Spinach Seasoning" from Two Sisters Gourmet. I add a bit of mustard also. Many different seasonings will work well, so tweak it to your own taste!
I put this in a pita, on crackers, bread, or on a bed of greens.
