Summer's Here Potato Salad

Ingredients
5 medium (2-1/4" to 3-1/4" dia.) Potato, raw 1 cup, diced Carrots, raw 0.5 cup Peas, frozen 3 stalk, medium (7-1/2" - 8" long Celery, raw 3 medium (4-1/8" long) Scallions, raw 8 tbsp hellmans mayo or (1/2 cup)1 tbsp vinegar 1 tbsp 1 % milk (14 mL) Salt and Pepper to taste
Directions
Boil potatoes in salted water until tender. Drain and cool on paper towels, peal skins and chop into a large bowl. Dice carrots and boil until almost tender; add peas and continue cooking just until peas are done. Drain and cool. Chop celery and onions. mix all vegetables and add mayonnaise, vinegar and salt & pepper to taste. You may also add a tablespoon or 2 of milk if dressing is too thick. Chill well before serving. Will keep in the fridge for several days.
