Baked Spicy Crusted Chicken

4 ounces Chicken Breast (cooked), no skin, roasted 1 serving Pork Rinds(Baken-ets Fried Pork Skins)(14g) 1 large Egg white, fresh 1 tbsp Parmesan Cheese, shredded
Crush pork rinds and mix with Parmesan cheese and any additional spices, such as salt, pepper, etc.
Take boneless, skinless chicken breast. I pound mine thinner so they cute quicker (they still remain juicy)
Spray pan with non-stick cooking spray - put in 350 degree oven to let pan heat up - this helps cook and crisp up under side of chicken
While pan is heating, dredge chicken in beaten egg white, then in the pork rind, cheese mixture.
Once all pieces are coated, place on heated pan and put in oven until chicken is done. Dependent upon thickness of chicken, this can take 20-40 minutes.
I use a meat thermometer (best investment you will ever make) -ensures your chicken is moist every time.
