Roasted veggie and beef with brocolli

Ingredients
8.0 oz Beef, 90% Lean Ground Beef from Sirloin5.0 oz Pork, fresh, ground, raw1.0 medium (2" dia, 5" long, raw) Sweet potato, cooked, baked in skin, without salt1.0 cup, chopped Onions, raw6.0 oz Tomato, grape (3oz = appro 12 tomatoes)0.5 cup, diced Celery, cooked0.25 cup, chopped Peppers, sweet, red, fresh3.0 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil10.0 clove Garlic4.0 cup Brocolli, Fresh Steamed
Directions
Cut and roast sweet potato and half onion, and grape tomatos in 1 tbsp oil. Sautee rest of onion with 1 tbs oil, celery and pepper. Once soft add beef and pork and brown. Add garlic powder, onion border and any herbs. Roast garlic with remaining oil. Meanwhile little steam brocolli. Let all veggi es cool. Toss in big bowl, top with 1/2 cups meat mixture. Can drizzle red wine vinegar for added flavor.
