250.0 gram Aborio Rice uncooked1.0 cup, sliced Zucchini74.0 gram(s) bell pepper, red, sweet, raw1.0 cup, chopped Onions, raw100.0 Grams Mushrooms, fresh1.0 clove Garlic40.0 Grams Parmesan Cheese, grated20.0 g Sainsbury's Be Good to Yourself Soft Cheese (UK)3.0 oz Pork Chops (pork loin), roasted2 cubes of vegetable stock and 1l water
Soften onions in tsp oil (not counted). Add courgettes, pepper & half of the mushrooms and Soften. Add rice and stir well to cover in juices. Add a ladle of vegetable stock (not included in calorie count) and stir. Cook until liquid absorbed. Add garlic and rest of mushrooms. Repeat stock addition until rice is to your liking (usually between 700-1000ml). Stir in grated parmesan and 1-2 tsps light soft cheese.
