Chicken Cacciatore

Ingredients
1 medium (2-1/2" dia) raw onion, chopped 1 medium green bell pepper, diced 3 tbsp extra virgin olive oil 1 clove garlic, minced 9 chicken thighs, bone and skin removed1 tsp Salt .25 tsp Pepper, black1 can Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano 1 tbsp red wine vinegar .5 tsp Rosemary, dried .5 tsp Granulated Sugar .5 cup Mushrooms, canned (one can)
Directions
1. Sauté onion and green pepper in 1 tablespoon olive oil in a large frying pan for 5 minutes. Remove and save for step 3.
2. Sprinkle chicken thighs with salt and pepper; brown until golden in the same frying pan with remaining 2 tablespoons oil and garlic.
3. Return onion and green pepper to pan containing the chicken. Add whole can of tomatoes, mushrooms and their liquid, wine vinegar, rosemary and sugar. Cover pan tightly and simmer for 40 minutes, or until the chicken is fork tender.
