Eggs Florentine

Ingredients
Directions
1 gram(s) Bread, whole grain toast (1 slice) 0.5 cup Arugula 2 tbsp kraft 100% parmesan graded cheese light (by CHEWAN) 1 serving Microwave Poached Eggs 1 pat (1" sq, 1/3" high) Butter, unsalted
Poaching the Egg
1. boil water in a sauce pan
2. crack the egg into a small bowl, then gently slide it into the water
3. cook egg with water on a low simmer for 3 minutes
Toast
1. Spray a small pan with pam spray or butter
2. place the bread in the pan and grill lightly one side
3. when the bread is cooked on the first side, flip it over and then place the cheese on the next side
4. continue to grill the bread until the cheese is melted
Spinach
1. Once the toast is ready, regrease the pan
2. Cook the arugula lightly until it is wilted
Assembly
1. when the toast is ready set it on a plate and spread the arugula over the toast, then place the poached egg on top
