2 cups Diced Tomatoes1 cup Tomatoe Saucesmall onion2 cloves garlic2 tbs olive oil1 cup mushrooms1/2 cup precooked lentils1 1/2 cups arugula8oz whole wheat penneparmesan to tastesalt & pepper to tastered chilli optional
Heat 2 tbls olive oil in pan over med heat. Add chopped onion and crushed garlic, cook until softened. Add mushrooms and saute a few minutes. Add chopped tomatoes, tomato sauce and lentils. Stir until heated through. Add arugula and stir until wilted. Serve over cooked penne, add cheese, salt & pepper, and red chilli to taste.
